He was classically trained at the Culinary Institute of America in Hyde Park, NY and was Executive Banquet Chef of the Windsor Court Hotel (rated the Best Hotel in The World in 1998) for 8 years. He also worked at Mr. B's Bistro, Muriel's in Jackson Square and Beau Chene Country Club, all in New Orleans.
Caryn Roland, Heirloom's Event Manager, has catered and detailed countless weddings. She was a wedding coordinator at the Windsor Court Hotel in New Orleans for years, then went on to work at other 4 and 5 star venues including: the Hotel Jerome in Aspen, the Hotel Viking in Newport, RI and LaPlaya Beach & Golf Resort in Naples, Fl. Caryn goes to great lengths to make sure every detail has been thought of in advance. She brings professionalism to a new level, and goes above and beyond the job of a "caterer" to ensure a flawless event.
